Years in the industry, one simple idea: open the place they'd always wanted. Colin and Sam Dillon spent years working in restaurants around town before opening their own in 2015. They wanted a place they'd actually want to go to — good food, honest drinks, and a staff that feels like family. Ten years later, nothing's changed.
